Baked button mushrooms with onion, sour cream, and cheese - a delicious Russian vegetarian dish.
Ingredients:
  • 4 tablespoons vegetable oil, divided
  • 7 cups quartered button mushrooms
  • 1 cup sour cream
  • 1 onion, chopped
  • salt and ground black pepper to taste
  • 1.25 cups shredded Gouda cheese
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Warm up the oil in a skillet over medium heat, then raise the heat to high. Toss in the mushrooms and sauté until golden brown, about 6 to 8 minutes. Be careful not to overcook, preventing them from releasing excess liquid. Mix in the sour cream thoroughly and transfer to a casserole dish.
  • In another skillet, warm 2 tablespoons of oil over medium heat. Sauté the onion until soft and translucent, about 4 to 6 minutes. Spread the onions on top of the mushrooms and season with salt and pepper. Sprinkle with Gouda cheese.
  • Bake until the cheese is gooey and golden brown, usually around 15 to 20 minutes in a preheated oven.
