Veggie-packed sausage pie - a simple and satisfying midweek delight.
Ingredients:
  • 13.80 gm olive oil
  • 1 brown onion, coarsely grated
  • 6 thin beef sausages
  • 1 carrot, coarsely grated
  • 2 zucchini, coarsely grated
  • 250.00 ml grated tasty cheese
  • 125.00 ml plain flour
  • 386.25 gm milk
Instructions:
  • Preheat the oven to a toasty 160°C, and generously grease a 4cm deep, 17.5cm x 24.5cm (base) baking dish.
  • 1. Heat oil in a frying pan over medium heat. Sauté onion until soft, about 2 minutes. Transfer to a bowl. 2. Cook sausages in the same pan for 6 minutes, flipping occasionally, until cooked through. Let cool for 5 minutes, then slice thinly. 3. Layer sliced sausages, onion, carrot, zucchini, and cheese on the bottom of a baking dish.
  • In a bowl, whisk together flour and milk until smooth. Add eggs, salt, and pepper, and continue whisking until fully combined. Pour the mixture over the sausages, then bake for 50 to 60 minutes until set. Let it stand for 5 minutes before serving. Enjoy!
