Delicious savory crêpes filled with creamy chicken and garlic - perfect for brunch or dinner with family!
Ingredients:
  • 1 cup all-purpose flour
  • 1.25 cups milk, 1% or 2%
  • 3 large eggs
  • 2 tablespoons butter, melted
  • 5 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 2 teaspoons chopped fresh thyme
  • 2.5 cups shredded rotisserie chicken
  • 0.33333334326744 cup herb and garlic cream cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Prepare the crêpe batter: In a large bowl, mix the flour and salt. In another large bowl, whisk together the milk, eggs, and melted butter. Gradually combine the egg mixture into the flour mixture until smooth. Cover the batter and refrigerate for 1 hour before straining it into a clean bowl.
  • Preheat a nonstick skillet or crêpe pan over medium heat and lightly brush with butter. Pour 2 tablespoons of batter into the pan, swirling immediately to create a thin layer. Cook until the top is set and the bottom is lightly browned, about 1-2 minutes. Gently loosen the crêpe with a spatula, flip, and cook the other side for about 1 minute until lightly browned.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Prepare the filling by melting 3 tablespoons of butter in a skillet over medium-high heat. Stir in garlic and thyme, then add the chicken. Cook and stir until heated through, approximately 5 minutes. Add cream cheese and stir until melted and smooth. Remove the skillet from the heat. Spoon the chicken mixture into the center of each crêpe, fold over, and place them in a shallow casserole dish, slightly overlapping. Finally, melt the remaining 2 tablespoons of butter and drizzle it over the crêpes.
  • Bake in the oven until heated through, approximately 10 minutes. Garnish with fresh parsley before plating.
