Easy scrolls recipe

Kid-friendly scrolls, ideal for lunch boxes or quick snacks. Great for breakfast too!
Ingredients:
  • 3 sheets frozen puff pastry, just thawed
  • 150g ricotta
  • 250g frozen spinach, thawed, excess liquid removed
  • 40.00 ml pizza sauce
  • 40g sliced pepperoni
  • 50g sliced ham, thinly sliced
  • 225g can pineapple pieces, drained, chopped
Instructions:
  • Preheat your oven to 200°C. Line two baking trays with parchment paper. Spread ricotta on a pastry sheet and add spinach, then season. Roll up the pastry from one edge to trap the filling inside. Trim the ends and cut the roll into 12 slices. Arrange the slices in a single layer on the prepared trays.
  • Lay out a fresh pastry sheet on a clean work surface. Spread with half of the pizza sauce and layer on the pepperoni. Roll up tightly from one end to seal the filling inside. Trim the ends and cut into 12 slices. Arrange the slices in a single layer on the prepared trays.
  • Lay out the second pastry sheet on a clean surface. Smear on the rest of the pizza sauce and layer with ham and pineapple. Roll up tightly from one end to seal the filling. Trim the edges and slice into 12 pieces. Arrange the slices in a single layer on the prepared trays.
  • Bake for 25 minutes, swapping trays halfway through, until the pastry is puffed and golden. Let it cool slightly, then enjoy warm or at room temperature.
