Easy Sirloin Thai Salad

Juicy sirloin with mixed greens, mango, avocado, bell peppers, and zesty Thai dressing.
Ingredients:
  • 1 (16 ounce) top sirloin steak boneless, cut 1 inch thick
  • 1 (5 ounce) package prewashed fresh herbs and greens lettuce mix
  • 1 ripe mango, sliced
  • 1 small ripe avocado, sliced
  • 0.5 cup shredded carrot
  • 0.5 cup diced red and/or yellow bell pepper
  • 0.5 teaspoon coarse sea salt
  • 2 tablespoons dry roasted peanuts, chopped
  • Lime wedges
  • 3 tablespoons agave nectar or honey
  • 2 tablespoons creamy or chunky natural peanut butter
  • 2 tablespoons hot water
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon rice or white vinegar
  • 1 teaspoon sesame oil
Instructions:
  • Grill the beef steak over medium heat until it reaches your preferred doneness, turning occasionally. It should take about 11 to 15 minutes on a charcoal grill or 13 to 16 minutes on a gas grill.
  • Whisk all Dressing ingredients in a medium bowl until smooth; then set aside. Arrange lettuce on a serving platter and top with mango, avocado, carrot, and bell pepper.
  • Slice the steak and season it with salt. Place the beef on top of the salad, drizzle with dressing, and sprinkle with peanuts if you like. Serve right away and squeeze lime wedges over the salad to taste.
