Savory taco meat rolled in tortillas, baked for a speedy meal.
Ingredients:
  • 0.5 cup uncooked instant rice
  • 0.5 cup water
  • 1.5 pounds ground beef
  • 0.75 (1 ounce) packet taco seasoning mix
  • 0.5 (15.25 ounce) can whole kernel corn, drained
  • 0.5 (8.75 ounce) can no-salt-added whole-kernel corn, drained
  • 1.5 cups shredded Cheddar cheese
  • 8 (10 inch) flour tortillas
  • 1 (16 ounce) jar salsa
Instructions:
  • Preheat the oven to 450°F (230°C) for a perfect bake.
  • Combine the rice and 1/2 cup water in a microwave-safe bowl, cover it, and microwave on High for 6 minutes until the water is fully absorbed. Set aside. Meanwhile, in a large skillet over medium-high heat, cook and crumble the ground beef until evenly browned and no longer pink. Drain any excess grease.
  • Lower the heat to medium and mix in the taco seasoning, corn, 1/2 cup water, 1 1/2 cups Cheddar cheese, and cooked rice. Cook and stir until the cheese melts and the corn is heated through. Fill the flour tortillas with the mixture, roll tightly, and place in an 8x11-inch baking dish (it will fit snugly). Top with salsa and sprinkle evenly with 1 1/2 cups Cheddar cheese.
  • Bake in the hot oven until the cheese topping is melted and golden brown, approximately 10 minutes.
