Easy Teriyaki Tofu Lo Mein

Savory tofu lo mein with sweet and tangy soy-teriyaki sauce.
Ingredients:
  • 1 (8 ounce) package lo mein noodles
  • 2.5 tablespoons sesame oil, divided
  • 1 (16 ounce) package extra-firm tofu, drained and cubed
  • 1 teaspoon ground ginger
  • 0.5 cup teriyaki sauce
  • 0.5 cup brown sugar
  • 1 stalk green onion, chopped
  • 1 teaspoon sesame seeds, or to taste
Instructions:
  • 1. Boil a large pot of water. Add lo mein noodles and cook for about 6 minutes until al dente, stirring occasionally. Drain thoroughly.
  • While the noodles cook, warm up 1 tablespoon of sesame oil in a large pan over medium heat. Add the tofu and saute until golden brown on all sides, approximately 6 minutes. Transfer the tofu to a plate.
  • In the same pan, warm up the remaining tablespoon of sesame oil. Sauté garlic for 2 to 3 minutes.
  • In a small bowl, mix together soy sauce, teriyaki sauce, brown sugar, and the remaining 1/2 tablespoon of sesame oil. Pour this flavorful mixture into the pan with tofu and lo mein noodles, making sure to coat them evenly.
  • Garnish with fresh green onion and sprinkle with toasted sesame seeds before serving.
