Indulge in tiramisu brownies with creamy cheese, rum, and coffee for a taste of Italy's best dessert.
Ingredients:
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 5 tablespoons cold brewed coffee
  • 6 oz (from 8-oz package) cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/4 teaspoon rum extract
  • 1 cup heavy whipping cream
  • 2 teaspoons unsweetened baking cocoa
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Line a 9-inch square pan with foil, leaving an overhang. Grease the foil with shortening or cooking spray.
  • Combine brownie mix, chocolate syrup, oil, eggs, and 3 tablespoons of coffee in a large bowl, mix until smooth. Transfer mixture to a pan and spread evenly.
  • Bake for 28 to 31 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out almost clean. Brush 2 tablespoons of coffee over the warm brownies. Allow them to cool completely on a rack, about 1 hour.
  • In a medium bowl, use an electric mixer to blend cream cheese and powdered sugar until smooth. Mix in rum extract and set aside. In a chilled small bowl, use an electric mixer to whip cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Spread the mixture over the cooled brownies.
  • Sprinkle cocoa evenly over the top of the brownies. Refrigerate for at least 2 hours until the topping is firm. Use the foil to easily lift the brownies from the pan, then peel the foil away. Cut into 16 squares and store covered in the refrigerator.
