Simplify tiramisu with poke technique using cake mix for same great taste.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1/3 cup vegetable oil
  • 1/4 cup brandy
  • 3 egg whites
  • 1/4 cup instant espresso coffee granules
  • 1/2 cup boiling water
  • 2 tablespoons corn syrup
  • 1 package (8 oz) cream cheese, softened
  • 2 cups whipping cream
  • 1 tablespoon unsweetened baking cocoa, if desired
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan) and grease the bottom of a 13x9-inch pan. In a large bowl, mix cake ingredients with an electric mixer on low speed for 30 seconds, then increase to medium speed for 2 minutes, scraping the bowl occasionally. Pour the batter into the pan.
  • Follow the baking instructions on the box for a 13x9-inch pan, then let it cool for 15 minutes.
  • In a small bowl, combine espresso granules with 1/2 cup of boiling water. Add corn syrup. Using a long-tined fork, poke holes in the top of the cake every 1/2 inch. Brush the top of the cake with the espresso syrup. Let it cool completely for about 1 hour.
  • In a medium bowl, use an electric mixer to blend cream cheese and powdered sugar until smooth. Gradually add whipping cream and beat for about 2 minutes on high speed until stiff peaks form. Spread the creamy mixture over the cake and dust with cocoa. Chill covered in the refrigerator.
