Easy Vitamix® Apple Jam

Whip up tasty apple jam in a Vitamix® for a perfect pairing with biscuits or waffles.
Ingredients:
  • 3 pounds Fuji apples
  • 2 cups white sugar
  • 2 tablespoons unsweetened pectin
  • 1 tablespoon lemon juice
Instructions:
  • Prepare the apples by removing the stems, washing, peeling, coring, and dicing for further use.
  • In a large microwave-safe dish, arrange the apples evenly and microwave for 20 minutes, remembering to give them a good stir halfway through at the 10-minute mark.
  • Simmer peelings and cores in a pot with just enough water to cover them for 15 to 20 minutes.
  • Transfer the microwaved diced apples to a bowl. Mash them using a potato masher, then mix in sugar, pectin, ginger, and salt. Stir well to combine.
  • Blend cores, peelings, and liquid apple mixture in a Vitamix® on high speed (8 or 9) for 2 to 3 minutes until smooth applesauce consistency is reached.
  • Pour the apple mixture into a deep skillet and bring it to a vigorous boil. Simmer over low heat until thickened, for 15 to 20 minutes. Take off the heat, stir in lemon juice, then ladle into jars. Wipe the rims, seal, and enjoy!
