Elevate mac and cheese with creamy Almond Breeze almondmilk and irresistible toppings for a crowd-pleasing twist.
Ingredients:
  • Garlic salt to taste
  • 1.5 cups small elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1.5 cups Almond Breeze Unsweetened Original almondmilk
  • 1 cup low-sodium chicken broth
  • 1 tablespoon spicy brown mustard
  • 2 teaspoons onion powder
  • 1 teaspoon garlic salt, or to taste
  • 2 cups shredded sharp Cheddar cheese
  • Freshly ground pepper to taste
  • 0.75 cup 1/4-inch diced turkey kielbasa
  • 0.66666668653488 cup chopped onion
  • 0.66666668653488 cup diced bell pepper (any color)
  • 0.5 teaspoon dried thyme
  • 0.33333334326744 cup real bacon bits
  • 1.5 cups mixed riced cauliflower and broccoli
  • 0.5 cup chopped red onion
  • 15 slices turkey pepperoni, cut into quarters
  • 0.33333334326744 cup diced bell pepper (any color)
  • 0.33333334326744 cup sliced olives
Instructions:
  • Prepare the elbow macaroni as instructed on the package for approximately 8 minutes.
  • While the macaroni is cooking, melt butter over medium heat in a large saucepan. Add flour and cook for 2 minutes, stirring constantly. Whisk in Almond Breeze almondmilk and stock and bring to a simmer, stirring frequently. Add mustard, onion powder, and garlic salt, and stir well.
  • Gradually sprinkle in the cheese, stirring until fully melted. Season with pepper. Drain macaroni thoroughly and mix in. Simmer for an additional 5 minutes, stirring occasionally.
  • In a skillet over medium-high heat, cook sausage and onion until sausage is browned and onion is soft, about 5 minutes. Add bell pepper and thyme; cook and stir for 2 minutes to soften peppers. Serve over hot Weeknight Mac and Cheese.
  • 1. In a large skillet over medium-high heat, sauté onion in oil for 5 minutes, stirring often. 2. Add bacon and cook for an additional 2 minutes. 3. Stir in riced veggies and cook for 2 to 3 more minutes to soften. 4. Season with garlic salt and serve over hot Weeknight Mac and Cheese.
  • In a large skillet over medium-high heat, sauté onion and pepperoni in oil until lightly browned, stirring frequently, about 5 minutes. Add bell pepper and cook for an additional 2 minutes to soften. If desired, add olives. Serve over hot Weeknight Mac and Cheese.
