Easy Zucchini Relish

Delicious zucchini relish recipe perfect for gifting or adding flavor to sandwiches and meats. Yields 14 small jars.
Ingredients:
  • 12 cups shredded zucchini
  • 4 cups chopped onion
  • 5 tablespoons salt
  • 1 tablespoon dry mustard
  • 1.5 teaspoons celery seed
  • 0.75 teaspoon ground nutmeg
  • 0.5 teaspoon ground black pepper
  • 5 cups white sugar
  • 2.5 cups apple cider vinegar
  • 1 medium red bell pepper, chopped
Instructions:
  • In a large bowl, combine zucchini, onion, and salt. Cover and refrigerate for 8 hours to overnight.
  • Wash vegetables under a refreshing stream of cold water and allow them to dry thoroughly.
  • Combine dry mustard, celery seed, nutmeg, and pepper in a bowl.
  • In a large pot, mix sugar, vinegar, bell pepper, drained vegetables, and spices. Simmer over medium heat until vegetables are tender, around 25 minutes.
  • Check fourteen 1/2-pint jars for cracks and rust on the rings, and remove any flawed jars. Place them in hot water to warm while making the relish. Clean new lids and rings with warm soapy water.
  • Fill hot, sterilized jars with vegetables, leaving a 1/4-inch space at the top. Remove air bubbles by running a clean knife or spatula along the insides. Wipe the rims clean with a moist paper towel, then seal tightly with lids and rings.
  • Fill a large stockpot halfway with water and place a rack inside. Bring to a boil. Using a jar holder, carefully lower the jars 2 inches apart into the boiling water. Add more boiling water if needed to ensure the jars are covered by at least 1 inch. Cover the pot, return to a rolling boil, and process for 25 minutes.
  • After simmering, allow the jars to cool at room temperature for 12 to 24 hours. Check the lids by gently pressing the center to verify they are sealed properly. Finally, remove the rings and store the jars in a cool, dark place.
