Easy-peasy chocolate and coconut fudge cake

Create decadent chocolate coconut fudge cake effortlessly.
Ingredients:
  • 300g dark chocolate (70% cocoa), chopped
  • 300g unsalted butter, chopped
  • 220g coconut sugar
  • 7 eggs
  • 20g (1/4 cup) desiccated coconut, lightly toasted
  • 4.20 gm coconut flour
  • 300g creme fraiche
  • 18.00 gm icing sugar mixture
  • 1 tsp vanilla bean paste
  • 90g (1/2 cup) pomegranate kernels
  • Toasted coconut chips, to serve
Instructions:
  • 1. Preheat your oven to 170C/150C fan forced. Grease and line a 22cm (base measurement) springform cake pan with baking paper. 2. In a heatproof bowl set over a pan of simmering water, melt the chocolate, butter, and salt until smooth, stirring occasionally. Once melted, stir in the sugar and remove from heat. Let it sit for 5 minutes to cool slightly.
  • Gently incorporate the eggs one by one until thoroughly combined and the mixture is smooth (it may slightly curdle). Add desiccated coconut and flour, mix until thickened and well combined. Transfer the mixture into the prepared pan, place it on a baking tray, and bake for 40 minutes until the center is just firm. Let it cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  • Beat creme fraiche, icing sugar, and vanilla with electric beaters until stiff peaks form. Spread over cake, then top with pomegranate kernels and coconut chips.
