Easy peasy fried rice

Whip up a quick and delicious fried rice for dinner.
Ingredients:
  • 2 eggs, beaten
  • 25g dried Chinese shrimp*
  • 5g dried Chinese mushrooms*
  • 36.40 gm peanut oil
  • 1 onion, finely chopped
  • 4 rashers rindless bacon, chopped
  • 400.00 gm cooked jasmine rice
  • 50g peas (frozen are OK)
  • 21.00 gm light soy sauce
  • 1/2 tsp sesame oil
  • Chopped green shallots, to garnish, optional
Instructions:
  • In a bowl, combine shrimp and mushrooms, cover with 100ml boiling water, and let soak for 30 minutes. Drain, discard liquid, and slice mushrooms.
  • Heat oil in a wok over high heat. Sauté onion and bacon until bacon just begins to crisp. Toss in shrimp, mushroom, rice, and peas, stir constantly for 2-3 minutes. Add eggs and stir until cooked through.
  • Incorporate soy sauce and sesame oil into the dish, then serve promptly, topped with optional shallots for an extra touch of flavor.
