Cheesy egg bake loaded with herbs, veggies, sausage, and bacon - perfect for a quick and delicious breakfast anytime!
Ingredients:
  • 1 pound bulk pork sausage
  • 1 tablespoon olive oil
  • 1 (10 ounce) package fresh spinach
  • 1 green bell pepper, chopped
  • 1 Roma tomato, chopped
  • 1.5 cups shredded Cheddar cheese
  • 2 (2.5 ounce) packages real bacon bits
  • 12 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
Instructions:
  • - Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease a 9x13-inch baking pan.
  • In a large skillet over medium-high heat, brown and crumble the sausage for 5 to 7 minutes, stirring occasionally. Discard excess grease.
  • Heat oil in a skillet over medium heat, then quickly saute spinach until just wilted, about 2 minutes. Remove from heat.
  • Spread spinach evenly in the baking pan, then add layers of bell pepper, tomato, and onion. Scatter half of the Cheddar cheese on top. Sprinkle sausage and bacon bits over the cheese. Finish by sprinkling the remaining cheese over the top.
  • Combine eggs, oregano, basil, salt, pepper, and garlic powder in a blender until smooth. Pour the mixture over the vegetables and meats in the baking pan.
  • Bake until a toothpick inserted in the center comes out clean, approximately 30 minutes in the preheated oven.
