Whip up these fluffy, eggless pancakes for a delicious morning treat.
Ingredients:
  • 150g self-raising flour
  • 55g caster sugar
  • 1.25 gm bicarbonate of soda
  • 250ml milk
  • 20g salted butter, melted
  • 2 tsp white vinegar
  • 4.40 gm vanilla extract
  • Salted butter, melted to grease
  • Mixed berries, to serve
  • Maple syrup, to serve
Instructions:
  • In a medium bowl, mix together flour, sugar, and bicarbonate of soda. Create a well in the center. Pour in milk, melted butter, vinegar, and vanilla. Use a balloon whisk to combine until smooth.
  • Preheat a non-stick pan over medium heat, then lightly brush with melted butter. Pour ¼ cup of batter into the pan and cook until bubbles form on the surface and the base is golden brown, about 1-2 minutes. Flip with a spatula and continue cooking for another 1-2 minutes until golden brown and cooked through. Transfer to a plate, cover loosely with foil to keep warm, and repeat with the rest of the batter to make a total of 8 pancakes.
  • Transfer the pancakes to serving plates, generously layer with mixed berries, then drizzle indulgently with maple syrup before serving straight away.
