Eggnog - pure cream

Indulge in a festive, creamy eggnog treat.
Ingredients:
  • 650ml milk
  • 250ml Pure Cream
  • 2 cinnamon sticks
  • 1 vanilla pod, split, seeds scraped
  • 5 eggs, separated
  • 120g caster sugar
  • 150ml rum
  • Pinch of ground cinnamon or nutmeg, to serve
Instructions:
  • In a large saucepan over medium heat, gently warm the milk, cream, cinnamon, and vanilla seeds and pod. Bring to a gentle simmer, then remove from heat just before boiling and set aside.
  • In the electric mixer bowl, whisk the egg yolks and sugar until light and thick. Gradually pour in the milk mixture while beating, until well combined. Gently fold in the rum and chill in the refrigerator for 2 hours, or until cold.
  • In a large bowl of an electric mixer, whisk the egg whites until soft peaks form. Gently fold them into the eggnog mixture until just combined before serving.
  • Garnish with a sprinkle of extra ground cinnamon or freshly grated nutmeg before serving.
