Spiced eggnog cookies with creamy eggnog icing, ideal for festive cookie trays.
Ingredients:
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground nutmeg
  • 0.25 teaspoon ground cinnamon
  • 0.75 cup butter, softened
  • 2 eggs
  • 0.25 cup eggnog
  • 1 teaspoon rum extract
  • 2 tablespoons light corn syrup
  • 0.5 teaspoon rum extract
  • 0.5 teaspoon ground nutmeg
  • 3 cups powdered sugar, or as needed
Instructions:
  • Combine flour, baking powder, nutmeg, and cinnamon, whisking until well blended.
  • Using an electric mixer, blend sugar and butter in a separate bowl until creamy. Blend in eggs, eggnog, vanilla extract, and rum extract. Combine with flour mixture and mix by hand until dough forms. Cover with plastic wrap and refrigerate for at least 2 hours.
  • Preheat the oven to 375°F (190°C), then prepare a baking sheet with parchment paper.
  • Flatten the dough to a 1/2" thickness on a lightly floured surface, use cookie cutters to create shapes, and arrange them 1 inch apart on the baking sheet.
  • Bake the cookies in batches in the preheated oven until lightly browned on the bottom, 8 to 10 minutes. Transfer to a wire rack and cool for about 30 minutes.
  • Whisk together eggnog, corn syrup, vanilla extract, rum extract, and nutmeg in a bowl. Gradually add powdered sugar 1 cup at a time, mixing well until the icing is smooth and reaches your desired consistency.
  • Coat cookie tops with icing and let them sit on waxed paper to set.
