Festive thumbprint cookies with a hint of eggnog flavor, ideal for the holidays. Replace rum with rum extract and milk for a non-alcoholic option.
Ingredients:
  • 0.75 cup butter, softened
  • 0.5 cup white sugar
  • 0.25 cup packed brown sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 cup butter
  • 1 cup confectioners' sugar
  • 1 tablespoon rum
  • 1 pinch ground nutmeg
Instructions:
  • Preheat the oven to 350°F (175°C) to get it nice and toasty for baking.
  • Cream together 3/4 cup butter, white sugar, and brown sugar in a medium bowl until smooth. Beat in egg and vanilla. Stir in flour and salt by hand to form a soft dough. Roll dough into 1 inch balls and place them 2 inches apart on ungreased cookie sheets. Make an indentation in the center of each cookie using your finger or thumb.
  • Bake in the oven until edges turn golden, approximately 10-12 minutes. Let it cool on the baking sheet briefly before transferring to a wire rack to cool completely.
  • Combine 1/4 cup butter, confectioners' sugar, and rum in a small bowl. Drop teaspoonfuls of the filling onto cookies, then sprinkle with nutmeg. Allow to set before storing in an airtight container.
