Easy and delicious English muffin tuna melts - a kid-friendly dinner with tuna salad, cheese, and English muffins.
Ingredients:
  • DAD ADD: Quick Pickled Veggies:
  • 1 medium carrot
  • 5 radishes
  • 1/2 pickle
  • 3 to 4 tablespoons pickle juice
  • For the Tuna Melts:
  • 1 stalk celery, minced
  • 1/4 cup minced red onion
  • 2 tablespoons minced red bell pepper
  • Juice of 1/2 lemon
  • 2 cans (about 10 total ounces) albacore tuna, oil or water packed
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/3 cup mayonnaise
  • 4 whole English muffins
  • 8 slices Swiss cheese
Instructions:
  • Prepare the pickled veggies by thinly slicing the carrot, radishes, and pickle. Combine the sliced veggies with 3 tablespoons of pickle juice, allowing them to marinate briefly while preparing the tuna melt muffins. Adjust seasoning with additional pickle juice to taste.
  • Heat the oven to 400°F.
  • Prepare the tuna mixture: Combine finely chopped celery, onion, red pepper, lemon, salt, pepper, and tuna in a medium bowl, then gently mix in the mayo at the end.
  • On a baking sheet, lay out English muffin halves. Layer each muffin with half a slice of Swiss cheese, followed by approximately two tablespoons of tuna salad mix. Finish off by topping with the remaining half slice of cheese.
  • Bake until the tuna melts are golden brown and the cheese is gooey, for 12 to 15 minutes.
  • Enjoy: Serve the warm tuna melts with optional pickled veggies on the side. Although the prepared melts don't keep well, the tuna salad mix stays fresh in the fridge for a few days, and you can make the muffins whenever you'd like.
