Ethiopian spiced cabbage and potato side dish, with tender veggies. Great for weeknight dinners.
Ingredients:
  • 0.5 cup olive oil
  • 4 medium carrots, thinly sliced
  • 1 medium onion, thinly sliced
  • 0.5 head cabbage, shredded
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground turmeric
  • 5 medium potatoes, peeled and cut into 1-inch cubes
Instructions:
  • In a skillet over medium heat, warm olive oil. Add carrots and onion; sauté until starting to soften, approximately 5 minutes. Mix in cabbage, salt, pepper, cumin, and turmeric; cook for 15-20 minutes.
  • Toss in the potatoes and simmer over medium-low heat covered until they are tender, approximately 20 minutes.
