Zesty cilantro pesto with nuts, Parmesan, garlic, white wine vinegar, and cayenne tossed with farfalle pasta for a quick and flavorful meal.
Ingredients:
  • 1 (16 ounce) package farfalle pasta
  • 1 bunch fresh cilantro
  • 0.5 cup walnuts or pecans
  • 0.25 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 tablespoon white wine vinegar
  • 0.5 teaspoon cayenne pepper
  • salt to taste
  • 0.5 cup olive oil
Instructions:
  • First, fill a large pot with water and generously salt it. Bring the water to a boil. Add the pasta and cook until it is al dente, about 8 to 10 minutes. Once cooked, drain the pasta thoroughly.
  • In a food processor or blender, combine cilantro, nuts, Parmesan, garlic, vinegar, cayenne pepper, and salt. Blend while slowly pouring in 1/4 cup of olive oil until smooth. Gradually add more olive oil until pesto is creamy and smooth.
  • In a small saucepan, gently warm the pesto over low heat, stirring constantly, until it just begins to simmer. Drizzle the warm pesto over the cooked pasta and toss to coat evenly.
