Elevate traditional colcannon with bacon, ham, and mayo in creamy mashed potatoes mixed with cabbage. Sprinkle cheese on top and enjoy as a flavorful side or main dish.
Ingredients:
  • 0.5 cup water
  • 3 pounds potatoes, peeled and cut into chunks
  • 0.25 cup milk
  • 2 tablespoons mayonnaise
  • 0.25 cup unsalted butter
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 0.25 teaspoon cayenne pepper
  • 0.5 head cabbage, sliced into thin strips
  • 2 cups fully cooked ham, cut into bite-size pieces
Instructions:
  • In a large pot, gently place the potatoes and cover them with salted water. Boil until tender, around 20 minutes. Drain and move the potatoes to a big mixing bowl.
  • Combine milk, mayonnaise, and butter with potatoes, then mash until smooth using a potato masher.
  • In a large skillet over medium heat, cook and stir bacon until the fat is rendered, which should take about 3 to 5 minutes.
  • Cook bacon and drippings with onion, garlic, and cayenne pepper, stirring often until onions are translucent, for approximately 5 minutes.
  • Combine cabbage and water into the fragrant onion mixture, stirring until the cabbage wilts, approximately 5 minutes. Season generously with salt and freshly ground black pepper to enhance flavors.
  • Incorporate the cabbage mixture gently into the mashed potatoes.
  • Sear ham pieces in the skillet with the cabbage mixture until golden brown, which should take about 3 to 5 minutes.
  • Incorporate the cooked ham into the mashed potatoes and cabbage mixture until well blended.
