Fabulous Oatmeal-Bran Cake

Moist and versatile cake that's light and irresistible.
Ingredients:
  • 1.5 cups boiling water
  • 0.5 cup rolled oats
  • 0.5 cup whole bran cereal
  • 1 cup white sugar
  • 1 cup packed light brown sugar
  • 0.5 cup shortening
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1.5 cups all-purpose flour
Instructions:
  • Soak oats and bran cereal in piping hot water for 10 minutes.
  • Mix the rest of the ingredients together, then fold in the oat mixture. Divide the batter between two 8 or 9-inch pans.
  • For muffins, bake at 350 degrees F (175 degrees C) for about 15 minutes or until a toothpick comes out clean. For other dishes, bake for 30 to 40 minutes.
