Indulgent scalloped potatoes layered with creamy rosemary-infused goodness.
Ingredients:
  • cooking spray
  • 1.5 cups grated Parmesan cheese
  • 2 tablespoons minced fresh rosemary
  • 2 cloves garlic, minced
  • 3.5 pounds red potatoes
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon olive oil
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and coat an 8-inch baking dish with cooking spray.
  • Combine the Parmesan cheese, fragrant rosemary, and pungent garlic in a bowl.
  • Slice 3-4 potatoes thinly using the finest setting on a mandolin, then slice the rest slightly thicker.
  • Layer the prepared baking dish with overlapping thin potato slices, creating a 2 to 3 slice deep bottom layer. Place the remaining slices along the sides of the baking dish, ensuring they stick out half an inch over the rim and overlap to form a 4 slice deep layer.
  • Layer a third of the thick potato slices in the baking dish followed by a third of the Parmesan cheese mixture. Repeat another layer. Then, add the remaining potato slices and set aside a third of the Parmesan cheese mixture.
  • In a saucepan over medium heat, melt butter then whisk in flour. Add milk and stir occasionally until sauce thickens, about 5 to 6 minutes. Finally, incorporate salt to taste.
  • Using a knife, create wells in the potato slices for the sauce to flow through. Evenly pour the sauce over the potatoes in the baking dish. Sprinkle the remaining Parmesan cheese mixture on top. Brush olive oil on the exposed edges of the potatoes.
  • Roast in the oven until potatoes are tender with a golden crust, for 1 hour to 1 hour and 15 minutes.
