Fancy sausage rolls

Elevate your game day with delicious homemade sausage rolls.
Ingredients:
  • 1 1/2 sheets frozen ready-rolled puff pastry, thawed
  • 60ml pesto
  • 50g mozzarella
  • 35g sun-dried tomato
  • 500g plain beef sausage or flavoured sausages
  • 1 egg, whisked
  • Sesame seeds, to sprinkle
  • Poppy seeds, to sprinkle
Instructions:
  • Preheat your oven to a toasty 220°C and prepare two baking trays by lining them with parchment paper.
  • Cut a shallow incision down each sausage lengthwise and carefully remove the skin, keeping the sausages intact. Cut the whole pastry sheet in half lengthwise to create 3 long rectangular pieces of pastry.
  • Spread a generous amount of pesto on each piece of pastry, making sure to leave a 2cm border along one long edge. Sprinkle the cheese and tomatoes evenly over the pesto. Lay two sausages end to end across each piece, then brush the exposed pastry edge with a bit of egg. Carefully roll up each piece tightly to seal in the delicious filling. Slice each roll into four equal pieces, brush with more egg, and top with sesame and poppy seeds. Arrange the rolls seam-side down on the baking trays. Bake for 25 minutes or until beautifully golden and cooked through. Serve immediately for maximum enjoyment.
