Elevate the classic Aussie sausage sandwich with gourmet fennel and tomato rolls.
Ingredients:
  • 1 small fennel, fronds reserved, thinly sliced
  • 100g mayonnaise
  • 1 garlic clove, crushed
  • 2 tsp drained capers, finely chopped
  • 18.20 gm olive oil
  • 500g Angus Beef Sausages
  • 300g pkt Mini White French Sticks
  • 40g baby rocket leaves
  • 150g cherry tomatoes, halved
Instructions:
  • Roughly chop the fennel fronds. Mix mayonnaise, garlic, lemon juice, capers, fennel, and chopped fennel fronds in a medium bowl. Season to taste.
  • Heat oil in a large frying pan over medium-high heat. Cook sausages, turning occasionally, for 6-8 minutes until fully cooked.
  • Preheat the oven to 220C. Arrange the bread on a baking tray and bake for 5-7 minutes until lightly browned. Cut each bread stick in half crossways and then carefully split lengthways without cutting all the way through.
  • Diagonally slice the sausages into thick pieces. Spread half of the fennel mixture over the bread. Layer with rocket, tomato, and sausage slices. Top with the remaining fennel mixture. Season to taste.
