Upgrade classic ramen with chicken, mushrooms, onions, and carrots for an exciting noodle soup twist.
Ingredients:
  • 4 cups water
  • 8 ounces sliced fresh mushrooms
  • 1 bunch green onions, thinly sliced, divided
  • 1 large carrot, sliced
  • 0.5 yellow onion, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon sriracha sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice wine vinegar
  • 0.5 teaspoon ground white pepper
  • 0.5 teaspoon cracked black pepper
  • 2 (3 ounce) packages chicken-flavored ramen noodles
Instructions:
  • In a large pot, bring together water, mushrooms, 1/2 of the green onions, carrot, onion, soy sauce, garlic, Sriracha sauce, sesame oil, rice wine vinegar, white pepper, black pepper, and flavor packets from ramen. Bring to a boil, then add noodles. Cook until noodles are al dente, about 5 minutes, stirring occasionally.
  • Simmer gently until vegetables are tender, approximately 10 minutes. Garnish with the rest of the green onions before serving.
