Irresistible zucchini muffins bursting with walnuts and cranberries - a flavorful treat for breakfast or snacking.
Ingredients:
  • 6 tablespoons flour
  • 1/4 bup brown sugar
  • 2 tablespoons butter
  • 0.5 cup margarine, softened
  • 1 egg
  • 1.5 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 cup grated zucchini
  • 1 cup cranberries
  • 0.5 cup walnut pieces
Instructions:
  • Preheat the oven to 375°F (190°C) and place liners in a 12-cup muffin tin.
  • Prepare the topping by combining flour and brown sugar in a bowl, then cutting in butter until it forms pea-sized crumbs.
  • In a large bowl, use an electric mixer to beat together sugar and margarine until light and fluffy. Then, mix in the egg and vanilla.
  • In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually mix this into the butter mixture. Gently fold in zucchini, cranberries, and walnuts. Fill muffin cups almost to the top with the batter and sprinkle topping on each muffin.
  • Bake until a toothpick inserted into the center comes out clean, approximately 25 minutes in the preheated oven.
