Pick up a rotisserie chicken for a quick and easy chicken tetrazzini casserole tonight!
Ingredients:
  • cooking spray
  • 1 (12 ounce) package rotini pasta
  • 2 tablespoons butter
  • 2 onions, chopped
  • 2 stalks celery, finely chopped
  • 0.5 cup finely chopped red bell pepper
  • 2.25 cups milk
  • 1 (10.75 ounce) can cream of mushroom soup
  • 0.5 teaspoon poultry seasoning
  • 0.125 teaspoon ground black pepper
  • 1 rotisserie chicken, meat removed and chopped
  • 1 cup shredded Cheddar cheese, divided
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and grease a 13x9-inch baking dish with nonstick cooking spray.
  • 1. Boil generously salted water in a large pot. 2. Cook rotini until al dente, about 8 minutes; drain. 3. Transfer rotini to a baking dish.
  • In a heavy saucepan over medium heat, melt the butter until sizzling. Add the onions, celery, and bell pepper, and sauté until soft, about 5 minutes.
  • Combine the milk, cream of mushroom soup, poultry seasoning, salt, and black pepper with the onion mixture. Let it simmer on medium-low heat for about 5 minutes. Add the chicken and 1/2 cup of Cheddar cheese to the pot, then pour the mixture over the rotini. Sprinkle the remaining Cheddar cheese on top.
  • Bake until cheese is bubbly and golden, approximately 25 minutes in a preheated oven.
