Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 1 package (3 oz) cream cheese, softened
  • 1 package (6 oz) chèvre (goat) cheese
  • 1 1/2 tablespoons chopped fresh chives
  • 2 tablespoons finely chopped yellow bell pepper
  • 2 tablespoons finely chopped walnuts, toasted*
  • 2 tablespoons chopped pitted Kalamata or Spanish olives
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 jar (2 oz) diced pimientos, drained
  • Crackers or cocktail breads
Instructions:
  • Prepare three 6-ounce custard cups or molds by lining them with plastic wrap. Using an electric mixer on medium speed, blend both packages of cream cheese and chèvre cheese until smooth in a medium bowl. Divide the mixture evenly into 3 small bowls (about 2/3 cup each).
  • Fold the chives into one portion of the cheese mixture. Evenly layer half of the mixture into a lined cup. Sprinkle with bell pepper, then add the remaining cheese mixture on top.
  • Gently fold walnuts into a separate portion of the cheese mixture. Spread half of the mixture evenly into a lined cup, then layer with olives before adding the remaining walnut mixture on top.
  • Combine Parmesan cheese into the rest of the cheese mixture. Spoon half the mixture evenly into the remaining lined cup, top with pimientos, then add the remaining Parmesan mixture. Cover and refrigerate the cheese mixtures in cups for at least 24 hours but no longer than 3 days.
  • Invert cups onto serving plate, gently lift off cups and plastic wrap, and serve with crackers.
