Feta and chive biscuits

Irresistibly crunchy cheese biscuits.
Ingredients:
  • 60g (3 tbsp) butter, at room temperature
  • 60g Australian feta, coarsely crumbled
  • 3.75 gm ground cumin
  • Pinch cayenne pepper
  • 10 fresh chives, snipped
  • Salt and ground black pepper, to taste
  • 115g (3/4 cup) plain flour
Instructions:
  • Preheat your oven to 200°C and prep 2 baking trays with non-stick baking paper.
  • Combine butter, feta, cumin, cayenne pepper, chives, salt, and pepper in a medium bowl. Mix thoroughly with a fork until well blended.
  • Incorporate 40g (1/4 cup) of flour with a fork until just combined. Add the remaining flour in 2 batches. Use your hands to form a firm dough, then lightly knead on a clean surface until smooth. Shape into a disc, wrap in plastic, and chill in the fridge for 30 minutes.
  • Take the dough and divide it into 16 equal portions. Roll each portion into a ball and place them on the lined trays, making sure they are about 7cm apart. Use the base of a floured glass to flatten each ball until they are about 7cm in diameter.
  • Bake the biscuits in the preheated oven for a total of 12-13 minutes, swapping trays halfway through, until lightly browned. Allow them to cool on a wire rack.
