Fiesta Chicken Breasts with Tomato-Avocado Salsa

Savor a Mexican-inspired chicken dinner with flavorful tomato-avocado salsa. Perfect for a hearty and delicious meal.
Ingredients:
  • 2 medium tomatoes, seeded and chopped (1 1/2 cups)
  • 1 medium avocado, pitted, peeled and chopped (1 cup)
  • 4 medium green onions, sliced (1/4 cup)
  • 1 to 2 tablespoons lime juice
  • 1 1/2 teaspoons finely chopped jalapeño chili
  • 1 clove garlic, finely chopped
  • 4 bone-in chicken breasts (about 2 lb)
  • 1/4 cup lime juice
  • 1/4 cup vegetable oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 4 flour tortillas (8 inch), cut in half, then cut into 1/2-inch strips
Instructions:
  • Combine all salsa ingredients in a medium glass or plastic bowl and chill until serving.
  • Place the chicken in a shallow glass or plastic dish. Combine 1/4 cup lime juice, 1/4 cup oil, cumin, and salt in a small bowl, then pour the mixture over the chicken. Cover and refrigerate for 1 hour.
  • Preheat oven to 375°F and generously coat a 9-inch square pan with cooking spray.
  • Arrange chicken in a pan, skin side up, and generously pour over the flavorful marinade. Bake covered for 30 minutes, then uncover and continue baking for 20-30 minutes more, basting occasionally, until the chicken reaches an internal temperature of 170°F and the juices run clear when pierced at the thickest part.
  • Heat 2 tablespoons of oil in a 10-inch skillet over medium-high heat until hot. Cook tortilla strips in the hot oil for 3 to 5 minutes, stirring occasionally, until they are crisp and golden brown. Serve chicken topped with salsa and garnish with the crispy tortilla strips.
