Fig, blue cheese and quince paste tarts

Impress your guests with a fabulous platter of figs, cheese, and quince.
Ingredients:
  • 2 sheets frozen puff pastry, thawed
  • 1 egg white
  • 5 fresh figs, cut into quarters
  • 40.00 ml quince paste
  • 60g firm blue cheese (try Stilton), crumbled
  • 18.20 gm extra-virgin olive oil
  • 20.00 ml balsamic vinegar
Instructions:
  • Preheat your oven to a toasty 200C. Line two baking trays with parchment paper.
  • Cut out 9 rounds from each pastry sheet with a 7.5cm diameter. Place them on prepared trays. Use a 3cm cutter to gently score the center of each round without cutting through. Lightly brush with egg white. Bake for 10-12 minutes until puffed and golden. Preheat a barbecue plate or char-grill pan over medium heat.
  • Grill fig quarters until beautifully charred for 2 minutes, then flip once. Remove from heat and set aside.
  • Place a quince paste in the center of each tart, top with a fig quarter, and crumble blue cheese over them.
  • Whisk oil and vinegar in a small jug, then drizzle over tarts right before serving.
