Try this rich and creamy Mexican flan recipe by Iris Perez. For a decadent twist, swap 2 eggs with 8 oz of cream cheese for a cheesecake-like texture.
Ingredients:
  • 8 eggs
  • 1 (14 ounce) can sweetened condensed milk
  • 1.5 teaspoons vanilla extract
  • 1.5 cups white sugar
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C and get your 9-inch round cake pan ready for action.
  • First, blend eggs, condensed milk, and vanilla in a blender or food processor until smooth. In a medium saucepan, cook sugar, stirring constantly, until it liquefies. Remove from heat when it starts to turn light brown and pour into a prepared pan. Finally, pour the egg mixture over the liquid sugar.
  • Prepare a water bath by lining a roasting pan with a damp kitchen towel. Set the baking dish on the towel inside the roasting pan, ensuring the water reaches halfway up the sides of the baking dish. Place the roasting pan on the oven rack.
  • After baking for 70 minutes in the preheated oven, or until a knife inserted in the center comes out clean, carefully remove the pan from the water bath and let it cool completely for about 1 hour. Run a knife along the edge of the pan, then place a serving plate on top and invert the cake. Serve and enjoy!
