Slow cooker meatloaf with carrots and potatoes, bursting with flavor, ideal for a cozy family meal.
Ingredients:
  • 1 ground beef, or more to taste
  • 1 small onion, chopped
  • 0.5 cup bread crumbs
  • 0.25 cup beef broth
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon dried parsley
  • 0.25 teaspoon garlic powder
  • 0.25 cup ketchup
  • 3 potatoes, coarsely chopped
  • 0.25 cup baby carrots
Instructions:
  • Mix together ground beef, onion, bread crumbs, broth, egg, Parmesan cheese, 2 tablespoons ketchup, Worcestershire sauce, Italian seasoning, parsley, and garlic powder by hand in a bowl.
  • Shape the mixture into a loaf and place it in the center of the slow cooker, making sure to leave space around the perimeter.
  • Smother the meatloaf in a rich 1/4 cup of ketchup and arrange potatoes and carrots around it.
  • Cook on High for about 2 hours. Then, reduce heat to Low and continue cooking until meatloaf is fully cooked through and vegetables are tender, for 4 to 6 more hours. Use an instant-read thermometer to ensure the meatloaf reaches at least 160 degrees F (70 degrees C) in the center.
