Fluffy Fire House Cinnamon Rolls

Fluffy cinnamon rolls from a fire station recipe, guaranteed huge rise.
Ingredients:
  • 4 cups bread flour, or more as needed
  • 0.33333334326744 cup white sugar
  • 1 teaspoon salt
  • 1 (.25 ounce) package rapid-rise yeast
  • 0.33333334326744 cup unsalted butter, melted
  • 1.5 cups hot tap water
  • 1 large egg
  • 1 teaspoon oil, or as needed
  • 0.5 cup brown sugar, or as needed
  • 0.5 cup chopped pecans, or as needed
  • 2 tablespoons ground cinnamon, or as needed
  • 0.5 cup unsalted butter, melted, or as needed
  • 1.5 cups confectioners' sugar
  • 0.25 cup unsalted butter, softened
  • 3 ounces cream cheese, softened
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt, or to taste
Instructions:
  • In a stand mixer bowl with the paddle attachment, combine 2 cups of flour, sugar, and salt. Mix in yeast. Add butter and blend on low speed until combined. While mixer is running, pour in hot water. Add egg and mix until fully incorporated. Finally, add remaining 2 cups of flour and mix until dough is soft.
  • Switch to the dough hook attachment and knead the dough for 10 minutes. If the dough is not forming properly, gradually add a small amount of flour while the mixer is running. The dough is ready when it clings to the dough hook. Form the dough into a ball.
  • Grease a bowl. Add the dough, making sure to coat it with oil. Cover with a cloth and allow it to double in size, which should take 1 to 2 hours.
  • Prepare your work surface with a dusting of flour. Roll out the dough into a large 18x24 inch rectangle. Sprinkle brown sugar, pecans, and cinnamon over the dough, then generously drizzle melted butter on top. Roll up the dough tightly from one of the longer sides and slice it into twelve 2-inch pieces. Arrange the pieces on a baking pan or stone. Cover and let them rise until doubled, approximately 45 minutes. Keep a vigilant eye on the rolls; if they deflate or sink, bake immediately.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Bake the rolls in the hot oven until they turn golden brown, for about 6 to 10 minutes.
  • In a large bowl, blend confectioners' sugar, butter, cream cheese, vanilla, and salt. Use an electric mixer to beat until cream cheese lumps disappear. Whip on medium speed for an additional 2 to 3 minutes.
  • Spread the delicious icing over the warm rolls and enjoy!
