Indulge in a heavenly cheesy penne bake with crispy sage topping.
Ingredients:
  • 375g penne rigate
  • 40.00 gm butter
  • 40.00 ml plain flour
  • 375ml (1 1/2 cups) milk
  • 40g (1/3 cup) coarsely grated cheddar
  • 25g (1/3 cup) finely grated parmesan
  • 75g brie, coarsely chopped
  • 75g mild blue cheese, crumbled
  • 8 fresh sage leaves
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • Preheat the oven to 200°C. Boil pasta in salted water per package instructions. Drain and return to the pan.
  • Melt the butter in a saucepan over medium heat, then add the flour and cook for 30 seconds until it bubbles. Remove from heat and gradually stir in the milk until smooth. Return to medium heat and stir until thickened and boiling. Remove from heat and mix in cheddar, parmesan, brie, and blue cheese until melted. Season with salt and pepper.
  • Combine the cheese mixture with the pasta and toss gently. Spoon the mixture evenly into four 500ml (2-cup) ovenproof dishes. Sprinkle sage on top and bake for 20 minutes until golden. Finish by sprinkling with parsley before serving.
