Free-form peach pie

Fruit-filled pie dusted with icing sugar for an easy, delicious treat.
Ingredients:
  • 40.00 ml apricot jam
  • 1 sheet (25 x 25cm) frozen ready-rolled shortcrust pastry, just thawed
  • 32.00 gm brown sugar
  • 1 x 415g can peach slices, drained
  • Icing sugar, to dust
  • Bought vanilla custard, to serve (optional)
Instructions:
  • 1. Preheat your oven to 200°C. Line a baking tray with non-stick baking paper. Gently warm the jam in a small saucepan over low heat for 3 minutes or until completely melted.
  • Lay the pastry on the baking tray. Evenly spread the jam over the pastry, ensuring to leave a 2cm border. Sprinkle with 1 tablespoon of sugar.
  • Spoon the peach into the center of the pastry, fold in the edges to partially enclose the filling, and sprinkle with the remaining sugar.
  • Bake until golden, then allow to cool for 5 minutes. Dust with icing sugar and serve with custard, if preferred.
