Indulgent French apple cake, bursting with seasonal flavors, ideal for any occasion.
Ingredients:
  • 150g (1 cup) plain flour
  • 4.00 gm baking powder
  • 125g butter, at room temperature, chopped
  • 100g (1/2 cup) caster sugar
  • 60ml (1/4 cup) milk
  • 3 large pink lady apples, peeled, cut into 2-3cm pieces
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 180C/160C fan forced, then prepare a 21cm springform pan by greasing it and lining the base with baking paper.
  • In a bowl, sift the flour and baking powder. In a separate bowl, use electric beaters to cream together the butter and sugar until pale and creamy. Gradually add the eggs one at a time, beating well after each addition. Mix in the vanilla.
  • Combine the flour mixture and milk with the butter mixture, gently fold in the apple. Pour into the prepared pan, smoothing the surface. Bake for 35 to 40 minutes until a skewer inserted at the center comes out clean. Let it sit in the pan for 10 minutes, then move to a wire rack to cool.
  • Dust the cake with a delicate layer of icing sugar before serving.
