Rhubarb chunks in thick vanilla batter topped with apples and almonds make a delightful French cake.
Ingredients:
  • 1.25 cups white sugar
  • 1 stick butter
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1.6666667461395 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.125 teaspoon salt
  • 1.5 cups diced rhubarb
  • 1 apple, thinly sliced
  • 0.33333334326744 cup sliced almonds, or to taste
  • 1 pinch white sugar, or to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and grease a 9-inch round pan.
  • Cream together 1 1/4 cups sugar and butter with an electric mixer until light, fluffy, and well blended. Add eggs one at a time, then mix in the vanilla extract thoroughly after each addition.
  • Mix the flour, baking powder, and salt on low speed, then gently stir in the rhubarb until just combined.
  • Transfer the batter to the baking pan, ensuring it's evenly spread. Arrange apple slices in a circular pattern on top, then sprinkle with almonds and a touch more sugar for added crunch and flavor.
  • Bake in the preheated oven for 35 to 45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool, then serve either warm or cold.
