Try Chef John's delectable French apple cake using Honeycrisp apples for a simple yet delicious treat.
Ingredients:
  • 3 large baking apples (such as Honeycrips), cubed (about 4 cups)
  • 2 teaspoons apple cider vinegar
  • 1 cup all-purpose flour
  • 1/2 cup (1 stick) room temp unsalted butter
  • 1/2 cup granulated white sugar
  • 2 tablespoons light brown sugar
  • 2 large eggs
  • 3 tablespoons dark rum
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons granulated white sugar for the top
  • 1 tablespoon powdered sugar, optional
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously butter a 9-inch round cake pan and line the bottom with parchment paper.
  • Prepare the apples by peeling (or leaving the skin on), coring, and cutting them into 1/4 to 3/8-inch cubes. For optimal tenderness, ensure the cubes are not larger than specified. Transfer the apple cubes to a large bowl and coat them with apple cider vinegar.
  • Combine flour, baking powder, and salt in a small bowl.
  • In a separate bowl, cream together butter, 1/2 cup white sugar, and brown sugar using an electric mixer until fluffy. Beat in one egg on high speed until fully incorporated and smooth. Then, add the second egg and repeat. Incorporate rum, vanilla extract, and half of the flour mixture. Once the flour is fully mixed, add the remaining flour and gently fold in with a spatula.
  • Gently incorporate the apples into the batter until well combined. Pour the batter into the prepared pan, ensuring it is packed in tightly. Even out the top and sprinkle with the remaining 3 tablespoons of sugar.
  • Bake until a skewer inserted in the center comes out clean, approximately 45 minutes in the preheated oven.
  • Allow the cake to cool in the pan for around 30 minutes. Invert onto a wire rack, place a serving plate on top, flip back over, dust with powdered sugar, and serve.
