French Onion Green Bean Casserole: Caramelized onions and Gruyere cheese elevate this classic dish.
Ingredients:
  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced lengthwise
  • 1 tablespoon sherry vinegar
  • 2.5 tablespoons all-purpose flour
  • 2.5 cups milk
  • 1 pinch ground nutmeg
  • 1 pinch cayenne pepper to taste
  • 0.25 teaspoon ground thyme
  • 2 tablespoons melted butter
  • 0.66666668653488 cup panko bread crumbs
  • 2 pounds fresh green beans, trimmed
  • 4 ounces shredded Gruyere cheese, divided
  • 0.33333334326744 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x13 inch casserole dish.
  • In a large skillet over medium heat, melt 2 tablespoons of butter until sizzling. Cook onions until they turn soft and golden brown, about 15 minutes. Add sherry vinegar and transfer the mixture to a small bowl to reserve.
  • In the skillet, melt an additional 2 tablespoons of butter. Incorporate 2 tablespoons of flour while whisking continuously. Cook over medium heat until the flour emanates a tempting aroma, like a freshly baked pie crust, for approximately 3 minutes. Gradually add milk, about 1/2 cup each time, followed by nutmeg, cayenne pepper, and thyme. Let it come to a gentle simmer and thicken while whisking constantly, for about 3 more minutes. Transfer the mixture to a bowl and set it aside for later use.
  • Melt the remaining butter in a clean skillet, then stir in the panko until all crumbs are coated, and set aside.
  • Boil beans in a large saucepan of salted water over medium heat until bright green and crisp but not raw tasting, for 3 to 4 minutes. Drain thoroughly.
  • Layer half of the caramelized onions in the casserole dish, followed by the green beans. Season with salt and black pepper. Spread half of the Gruyere cheese on top. Pour the white sauce over the cheese. Add the remaining caramelized onions and press them down into the mixture. Finish with a layer of buttered panko crumbs, the rest of the Gruyere, and Parmesan cheese.
  • Bake in the oven until hot and gently browned, approximately 30 minutes. Allow to rest for 10 minutes before serving.
