French onion soup with goat's cheese toast

Savory caramelized onion soup with beef stock, paired with goat cheese toast sprinkled with tarragon.
Ingredients:
  • 18.40 gm reduced fat oil spread
  • 1000g brown onion, thinly sliced
  • 510.00 gm beef stock
  • 20.00 ml fresh thyme
  • 4 slices wholemeal bread, halved diagonally
  • 45g goat's cheese, crumbled
  • 20g fresh tarragon
Instructions:
  • In a large saucepan over medium heat, melt spread until sizzling. Add onion and cook, stirring occasionally, until soft and caramelized, about 30–35 minutes.
  • Combine stock, fresh thyme, and 2 cups (500ml) of water in a pot and bring to a boil. Simmer on low heat, without covering, for 40 minutes until the soup has thickened slightly.
  • Preheat the grill on high while you grill the bread on one side for 1–2 minutes until toasted. Flip the bread and top with cheese and tarragon, then grill for 2–3 minutes until the cheese melts. Serve the soup with the delicious goat’s cheese toast on the side.
