Elevate French toast with avocado, Parmesan, and parsley for a delicious savory twist.
Ingredients:
  • Melted butter, to brush
  • 3 eggs
  • 60ml (1/4 cup) milk
  • 8 slices whole grain bread
  • 1 firm ripe avocado, stone removed, peeled
  • 40g (1/2 cup) shaved parmesan
  • 62.50 ml fresh flat-leaf parsley leaves
Instructions:
  • In a medium bowl, gently combine eggs and milk, then season with sea salt and freshly ground black pepper.
  • Thinly slice the avocado into wedges, then combine it with Parmesan and parsley in a small bowl. Set the bowl aside for later use.
  • Preheat a large non-stick frying pan over medium heat and coat with melted butter. Dip slices of bread into the egg mixture for 10 seconds on each side. Cook until golden brown, about 2 minutes per side. Keep warm on a plate and repeat with remaining bread slices, adding more butter to the pan as needed.
  • For serving, place 2 slices of golden French toast on each plate and generously top them with the creamy avocado salad. Enjoy immediately.
