Decadently delicious French toast with the perfect balance of sweet and salty flavors.
Ingredients:
  • 200ml milk
  • 2 eggs
  • 0.63 gm ground cinnamon
  • 125ml (1/2 cup) double cream
  • 1/4 tsp vanilla bean paste
  • 4 rashers smoked streaky bacon
  • 80ml (1/3 cup) honey
  • 30g butter, chopped
  • 4 thick slices brioche loaf
  • 125g strawberries, hulled, quartered
  • Icing sugar, to dust
Instructions:
  • In a shallow bowl, combine the milk, eggs, and cinnamon, and set it aside.
  • Whisk the cream and vanilla in a small bowl with electric beaters until soft peaks form. Set aside.
  • 1. Preheat a non-stick frying pan over medium-high heat. Add the bacon and cook for 4 minutes, turning occasionally, until golden. Drizzle with honey and gently simmer for 30 seconds to 1 minute until the honey thickens and coats the bacon. Remove from heat and set aside.
  • In a non-stick frying pan, melt half of the butter over medium-low heat until it's foamy. Dip 2 brioche slices into the egg mixture until fully coated. Cook in the pan for 2-3 minutes on each side until they turn golden and crisp. Transfer to a plate and loosely cover with foil to keep warm. Repeat the process with the remaining butter, brioche, and egg mixture.
  • Top the French toast with crispy bacon, fresh strawberries, and fluffy whipped cream. Finish with a drizzle of reduced honey and a sprinkle of icing sugar for extra sweetness, if desired.
