Indulge Mom with this delectable strawberry treat.
Ingredients:
  • 250g hulled and halved strawberries
  • 24.00 gm icing sugar
  • 1 tsp balsamic vinegar
  • 4 eggs
  • 126.25 gm cream
  • 8.80 gm vanilla extract
  • 1 loaf unsliced white bread
  • oil spray
Instructions:
  • Preheat your oven to 150°C. In a saucepan over medium-low heat, simmer strawberries with 1 tablespoon of sifted icing sugar and balsamic vinegar, stirring occasionally, until pulpy for 8-10 minutes. Cover and set aside.
  • In a large bowl, combine eggs, cream, 1 tablespoon of icing sugar, and vanilla extract. Cut 8 thick slices of white bread.
  • Preheat a non-stick frying pan over gentle heat, then lightly spray with oil. Dip 1 slice of bread into the egg mix, ensuring it's fully coated. Shake off any excess egg and place the bread in the pan. Cook until golden and crisp on both sides for about 2-3 minutes each. Keep warm in the oven on a tray lined with non-stick baking paper.
  • Continue cooking the remaining slices of bread in the pan, adding a light layer of grease between each batch. Serve the French toast topped with a dollop of the strawberry compote.
