Whip up a fresh basil pesto in 15 minutes to elevate your pasta, potatoes, pizza, or bread.
Ingredients:
  • 2 cups fresh basil leaves, packed (can sub half the basil leaves with baby spinach)
  • 1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts (can sub chopped walnuts)
  • 3 garlic cloves, minced (about 3 teaspoons)
  • 1/4 teaspoon salt, more to taste
  • 1/8 teaspoon freshly ground black pepper, more to taste
Instructions:
  • Combine fresh basil leaves and pine nuts in a food processor and pulse until coarsely chopped.
  • Combine the garlic and flavorful Parmesan or Romano cheese in the food processor and pulse a few more times until well blended. Use a rubber spatula to scrape down the sides for an even mix.
  • With the food processor running, drizzle in the olive oil in a steady stream to help emulsify it and prevent separation. Pause occasionally to scrape down the sides of the processor.
  • Enhance the pesto sauce: generously season with salt and freshly ground black pepper. Use it to toss pasta, top baked potatoes, or spread on crackers or toasted bread. Share your feedback with a rating and review!
