Indulge in luscious blackberry crumble bars with a filling made of fresh blackberries and preserves for a rich, moist treat.
Ingredients:
  • 6 tablespoons seedless blackberry jam
  • 3 cups fresh blackberries
  • 0.25 cup white sugar
  • 3 tablespoons cornstarch
  • 0.13 teaspoon kosher salt

  • 0.75 cup uncooked quick-cooking oats
  • 1 cup flour
  • 0.5 cup sliced almonds
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon kosher salt
  • 0.5 cup unsalted butter, melted
Instructions:
  • In a small saucepan, mix together blackberries, blackberry preserves, white sugar, cornstarch, and 1/8 teaspoon kosher salt.
  • Stir the mixture on medium-high heat until it boils. Then, reduce the heat to medium and cook for 7 to 10 minutes, stirring occasionally to prevent sticking.
  • Remove the thickened mixture from the heat and let it cool.
  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Spray the parchment paper and sides of the pan with cooking spray.
  • In a bowl, mix oats, flour, light brown sugar, sliced almonds, cinnamon, baking soda, and salt until well combined. Slowly drizzle in melted butter while tossing and stirring the mixture until the flour and oats are fully incorporated.
  • Evenly distribute 2 cups of the crumble mixture on the prepared pan, pressing down firmly with your fingertips or the bottom of a measuring cup to flatten and smooth it out.
  • Bake in the preheated oven for about 10 minutes. Then, cool for 5 minutes before serving.
  • Spread the filling over the crust, then generously sprinkle the remaining crumble mixture on top. Bake in the oven until the top is golden brown and the filling is bubbling, approximately 40 minutes.
  • Allow to completely cool in the pan for 1 to 2 hours.
  • After the bars have cooled, use the parchment to easily lift them out of the pan. Cut them into 9 servings and enjoy at room temperature. Refrigerate any leftovers for later.
