Ingredients:
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup blueberries
  • 1 teaspoon lemon zest
  • 0.33333334326744 cup shortening
  • 0.75 cup milk
  • 1 egg
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease an 8-inch square baking pan.
  • In a large bowl, mix together flour, sugar, baking powder, and salt. In a separate bowl, toss blueberries with lemon zest.
  • In a separate bowl, cream the shortening until smooth. Combine the shortening mixture with the flour mixture, alternating with milk, and mix well for about 2 minutes. Add the egg and mix for about 1 minute until fully incorporated. Gently fold in the blueberries and pour the batter into the prepared pan.
  • Bake in the preheated oven for about 50 minutes until a toothpick inserted in the center comes out clean.
